Refrigeration, transport and the moment of cutting.

1 Do the fondant colours stain your mouth or teeth? Very intense fondant colours, black, deep red, royal blue, can tint the tongue for a while. It is temporary, it goes on its own and it has no consequences. 2 What if I have no room in the fridge? It happens more than you would think, especially with tiered cakes. Three ways out, best to worst: genuinely make room, collect as late as possible, or arrange it with the venue. 3 Can a cake be frozen? A designed cake, better not. Fondant and the freezer do not get on: as it thaws, moisture in the air condenses on the surface, the finish turns sticky, marks and loses its shine. Modelled figures soften and colours can run. 4 What do I do with the leftover cake? Cover the cut face with cling film so the sponge does not dry out, and keep it refrigerated. It will hold well for another couple of days. 5 Can I transport a two or three tier cake myself? You can, but it is worth knowing what you are taking on. A tiered cake travels assembled, with internal supports, and any sharp movement passes from one level to the next. It is the most delicate piece we make. 6 Can I send the cake by a delivery app or on a motorbike? A cake from the display case, yes, and that is why we are on UberEats and DiDi Food. A decorated or tiered cake, better not, and we would rather tell you beforehand. 7 Can I take the cake to another city, or on a plane? For event cakes we have delivered outside Mexico City, to Baja California, Sonora, Morelos and Querétaro, always quoted in advance, because it means planning the journey and the assembly. 8 Can I keep the top tier for our first anniversary? It is a lovely wedding tradition and it can be done, with clear expectations. Our cakes carry no preservatives, so a year in the freezer takes its toll: the flavour and the texture will not be those of the wedding day. 9 How long does the cake last out of the fridge? As little as possible. Our cakes carry no preservatives, and fruit, dairy and chocolate are sensitive to temperature: keep it constantly refrigerated and take it out shortly before cutting. 10 How long does the cake keep in the fridge? At its best, the first two days. Our cakes carry no preservatives or artificial additives, so their life is that of a fresh product. 11 How do I carry the cake in the car? Flat, on the floor of the car, on the passenger side. That is where it moves least. Never on the seat, which is sloped, and never in the boot, which gets hot and bounces. 12 How do I send you photos of how my cake turned out? On WhatsApp, and they genuinely make our day. Many of the photographs you see on our social media come from customers who sent us how the cake looked at their party.
