Looking after the cake

How long does the cake keep in the fridge?

In short

At its best, the first two days. Our cakes carry no preservatives or artificial additives, so their life is that of a fresh product.

To help it through those days: covered, in the clearest part of the fridge, with nothing on top and away from strongly scented food. Sponge and creams absorb smells with surprising ease.

Once cut, cover the exposed face with cling film so it does not dry out. A well-kept cake is still good on the third day. By the fifth it is no longer the cake we handed you.
