It happens more than you would think, especially with tiered cakes. Three ways out, best to worst:
- Genuinely make room. Take the shelves out that you need to before the cake arrives.
- Collect as late as possible. If you are coming to the shop, come close to the time of the event, not first thing.
- Arrange it with the venue. Almost all of them have a cold room and will take the cake in if you give them notice.
What we do not recommend is leaving it out and hoping. Without preservatives, a warm afternoon is enough to change a cake.
