How do I carry the cake in the car?

In short

Flat, on the floor of the car, on the passenger side. That is where it moves least. Never on the seat, which is sloped, and never in the boot, which gets hot and bounces.

  • Leave the cake inside its box, closed.
  • Put the air conditioning on gently, not pointed at the box.
  • Drive with the cake in mind: soft braking, speed bumps slowly, wide turns.
  • If the journey is long, do it first thing or in the late afternoon.
Fondant marks with a knock, and a cream that has slid will not go back into place. Half an hour of careful driving saves several days of work.
