Can I keep the top tier for our first anniversary?

It is a lovely wedding tradition and it can be done, with clear expectations. Our cakes carry no preservatives, so a year in the freezer takes its toll: the flavour and the texture will not be those of the wedding day.

If you would still like to, remove all the non-edible decoration, wrap the tier in several layers of cling film and then in foil, and freeze it as soon as possible. To thaw it, move it to the fridge the night before and let it come to room temperature before serving.

Our advice, offered fondly: enjoy the whole cake at the wedding, and on your anniversary let us make you a small fresh one. It will taste of that day, not of the freezer.
