What is fondant, what does it taste like, and is it very hard?
Fondant is an edible sugar paste, similar to modelling clay to work with but sweet and pleasant to eat. It is what makes the finishes and textures of a designed cake possible.
What it actually is
A sugar paste that is rolled out and modelled. Working with it is reminiscent of modelling clay, which is where the comparison comes from, but it is sweet and it is eaten.
Why we use it
Because it is what makes possible the smooth finishes, the modelled figures and the textures that mark out a designed cake. We were among the first bakeries in Mexico to work with these techniques and to bring them into Mexican pastry.
What comes off before eating
Non-edible supports, dowels and any structural piece. Whoever delivers the cake will point them out.
